So just about a year ago, I took a course about ethereum smart contracts. I finished most of it, and I learned about how smart contracts work, and the basics of solidity, gas fees, etc.

So for some reason, the course disappeared and I want to get back into solidity and smart contract development. I want to learn how to make production-ready DApps I can use for commercial projects. How to do local testing with dev tools, make my own test blockchain (with ganache I think?) and how to make the same DApps for other networks. I want to get into ERC-20/721/1155 tokens and learn how to interact contracts with eachother (i.e. reward NFT holders with tokens), or how crypto kitties did breeding, learn how to do liquidity pools, bridges, DAOs, and everything that's trending right now.

Where is the best place to start? I see a 16 hour youtube video that looks good, but I'm not sure if this will meet my needs. I have a very solid programming background and just want to learn about, specifically: the dev tools for testing, the production-ready techniques, the BIG NEW concepts & implementations, and interaction between smart contracts. Any good udemy courses? Youtube series? Websites? Thank you!
