How can bitcoin be trusted to not change over time?

I heard taproot and segwit are two "hard forks" / "upgrades" that happened to bitcoin and I'm wondering how is this even allowed?

How would satoshi feel about this?

How is this any different from the devs saying "I have an idea, lets change the block size and transaction speed" or "I have an idea, lets increase the bitcoin supply" ?

Who decides whether or not "taproot" or "segwit" becomes part of the main bitcoin?

What do these even do for bitcoin? Why did we decide to add it? Does adding new things into bitcoin ruin its integrity?

Is there a possibility that in the future, bitcoin devs say "hey lets add this new thing into bitcoin!" and then it ends up destroying bitcoin over the long run?

How are we supposed to trust a project in which bitcoin devs can just decide to change things about bitcoin?
