How to stake ETH now that the 2.0 merge is complete?

I was browsing for staking solutions after the switch to PoS, but I still see everyone still recommending RocketPool. But wasn't RocketPool the staking choice before the merge? What other ways have emerged to stake ETH after the merge? Is it possible to stake ETH without exchanging it with rETH even when I have less than 16 ETH?

Pardon me if I sound ignorant. I recently switched out of staking at CEXs, which used to be very simple. I got a cold wallet to secure my crypto, but staking ETH by exchanging ETH with rETH seems counterintuitive to the idea of safeguarding ETH inside the cold wallet.
